Mug Recipes: Easy Desserts on the Go




Every night is a good night for dessert! In my mind, there is no reason that justifies NOT having dessert as the final meal of the day. In our house, we actually have to have a reason to NOT have dessert. But sometimes the thought of whipping up a whole batch of cookies or a cake is too much, whether I’m in the comfort of my kitchen at home or traveling in our RV. And when my family is enjoying the great outdoors here in West Michigan or across the country at one of our beautiful national parks, baking in our travel trailer RV is almost impossible. At least that was until I found these decadent (and impossibly easy) mug dessert recipes! Designed to feed one hungry camper but so easy to double (or triple, or quadruple!), these mug recipes are perfect for easy desserts on the go! You’ll dirty very few dishes and the only appliance you’ll need is a microwave. It doesn’t get any easier than this to enjoy a personalized dessert in a mug! So grab a 12-14 oz. mug and a spoon and get ready to dive into deliciousness!


NUTELLA OATMEAL IN A MUG


Ingredients:

3 Tbsp. milk
1 Tbsp. olive oil
1 Tbsp. sugar
3 Tbsp. flour
1 ½ Tbsp. rolled oats
1 Tbsp. finely chopped pecans, optional (plus a little more for a topping)
¼ tsp. baking powder
1/8 tsp. salt
¼ tsp. cinnamon (optional)
Pinch of nutmeg (optional)
1 Tbsp. Nutella

Directions:

Whisk together the milk, olive oil, and sugar in a mug.
Add flour and whisk until smooth.
Add oats, pecans, baking powder, salt, cinnamon & nutmeg (if desired) and whisk thoroughly.
Drop the tablespoon of Nutella on top and partially submerge it in the cake batter.
Microwave on high for 30 seconds. Then microwave in 15-second intervals until the top appears to be dry and cooked and springs back when gently touched.
Let it cool for 5 minutes before diving in, as the Nutella center will be HOT!





5-MINUTE CHOCOLATE S'MORES IN A MUG


Ingredients:

2-3 Tbsp. graham cracker crumbs
3 ½ Tbsp. unsalted butter, melted
2 Tbsp. sugar
1 egg
½ tsp. vanilla extract
¼ C. flour
2 Tbsp. unsweetened cocoa powder
1/8 tsp. baking powder
pinch of salt
1 ½ oz. milk chocolate chips
Marshmallows or marshmallow fluff

Directions:

In a small bowl, combine ½ Tbsp. of melted butter with graham cracker crumbs. Stir until thoroughly moistened. Press crumbs into the bottom of your mug.
Combine 3 Tbsp. of melted butter with 1 ounce of chocolate. Melt in the microwave for 20-30 seconds. Set this aside.
In a small bowl, whisk the egg, sugar, and vanilla until smooth.
Add in the flour, baking powder, salt, and cocoa. Stir into a thick batter.
Add in melted butter/chocolate mixture and mix thoroughly.
Fold in the remaining chocolate chips (½ oz.).
Pour half of this mixture on top of your graham cracker crust.
Toss some marshmallows or marshmallow fluff on top.
Top this with the rest of the batter.
Microwave on high for 1 ½-2 minutes.
Garnish with more marshmallows if desired. If you want to melt these, you can microwave it for 5-10 seconds, put it under the broiler for 10 seconds, or torch them with a kitchen torch.
Top with graham cracker crumbs and enjoy!





CHOCOLATE PEANUT BUTTER MUG DESSERT


Ingredients:

¼ C. all-purpose flour
2 Tbsp. unsweetened cocoa powder
2 Tbsp. sugar
¼ tsp. baking powder
¼ C. milk (room temp)
2 Tbsp. butter, melted & cooled
¼ tsp. vanilla extract
1 Tbsp. creamy peanut butter
1 Tbsp. mini chocolate chips

Directions:

In a small bowl, whisk together the flour, cocoa powder, sugar, and baking powder until completely combined.
Blend in milk, butter, and vanilla until batter is smooth.
Pour batter into a mug.
In another small bowl, combine the peanut butter with the chocolate chips and then drop it into the center of the mug. Push it down so it’s even with the top of the batter.
Microwave on high for 1 minute. Let it cool before diving in!





CHOCOLATE CHIP COOKIE DOUGH MUG CAKE


Ingredients:

1 egg
3 Tbsp. brown sugar
1/3 C. flour
1 Tbsp. butter (softened)
3-4 Tbsp. mini chocolate chips
Ice cream of choice (optional)

Directions:

Crack the egg into your mug.
Add the brown sugar.
Add flour and softened butter.
Drop mini chips on top.
Mix all ingredients together with a spoon.
Microwave on high for 1 ½-2 minutes (or until the center of the top has set).
Serve with a scoop of ice cream on top if you desire!





LEMON CAKE IN A MUG


Ingredients:

3 Tbsp. flour
¼ tsp. baking powder
1 egg
3 Tbsp. sugar
2 Tbsp. vegetable oil
1 tsp. grated lemon zest
2 tsp. lemon juice
1 Tbsp. icing sugar

Directions:

In a small bowl, combine the dry ingredients until well mixed.
Using a fork, beat in the egg, oil, lemon zest, and lemon juice until well blended.
Pour into a 16 oz. mug that has been sprayed with non-stick cooking spray.
Microwave on high for 90 seconds.
When cool, sprinkle with lemon zest and icing sugar. Then eat out of the mug or transfer to a plate.





BERRY COBBLER MUG DESSERT


Ingredients:

¾ C. strawberries, chopped (fresh or frozen)
¼ C. powdered sugar
1/3 C. flour
1 Tbsp. sugar
½ tsp. baking powder
1 Tbsp. butter
2 Tbsp. milk

Directions:

Put chopped berries and powdered sugar in a mug and stir to combine. Do not fill over 2/3 full.
In a small bowl, mix flour, sugar, and baking powder.
Add in the butter with a fork until it’s combined.
Add milk and stir.
Put the dough on top of the strawberries. Add additional sugar if you desire.
Microwave on high for 1 ½-2 minutes.
Let it cool and enjoy with a spoon right out of the mug.
