Camping Recipe: Korean BBQ Shrimp

Ingredients

Recipe adapted from one on HalfBakedHarvest.com 

  • 2 lbs shrimp
  • 1/4 cup low sodium soy sauce
  • 3 tbsp of honey
  • 4 cloves garlic, minced or grated
  • 2 tbsp of gochujang
  • 1 tbsp of toasted sesame oil
  • juice of half a lemon
  • CITRUS BUTTER
  • 2 tbsp of butter, at room temperature
  • 1/3 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 fresno pepper, sliced

Instructions:

  1. Peel, clean and remove the tails of the shrimp.
  2. In a gallon sized ziplock bag, thoroughly combine the honey, garlic, soy sauce, sesame oil, gochujang, and lemon juice. 
  3. Add the shrimp to the bag. Seal it and toss the shrimp to coat them in the mixture.
  4. You can marinate the shrimp for up to 24 hours, but this step is optional.
  5. In a small saucepan, mix the butter, orange juice, and lemon juice.
  6. Cook over medium heat until the sauce is melted and smooth. 
  7. Remove from the heat and fold in the cilantro and chiles. 
  8. Preheat an outdoor grill or grill pan to high.
  9. Place 4-5 shrimp on a skewer and repeat until shrimp is gone.
  10.  Grill each skewer for 2 minutes on each side. 
  11. Serve with a drizzle of the citrus butter, top with sesame seeds and cilantro. Enjoy!
